Ingredients:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 tsp vanilla extract
- 1 can (20 oz) crushed pineapple, undrained
- 1/2 cup unsweetened shredded coconut (optional)
- 1/2 cup chopped pecans or walnuts (optional)
Frosting:
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1/4 cup crushed pineapple, drained
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.
- Mix flour, sugar, baking soda, and salt in a large bowl.
- Add eggs, vanilla, and crushed pineapple (with juice). Stir well.
- Fold in coconut and nuts if using. Pour batter into the pan.
- Bake for 30-35 minutes. Cool completely.
- For frosting, beat butter and cream cheese until smooth. Add powdered sugar, vanilla, and crushed pineapple.
- Frost the cooled cake. Garnish with coconut or nuts if desired.
