Tropical Pineapple Cake

Ingredients:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 can (20 oz) crushed pineapple, undrained
  • 1/2 cup unsweetened shredded coconut (optional)
  • 1/2 cup chopped pecans or walnuts (optional)

Frosting:

  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup crushed pineapple, drained

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.
  2. Mix flour, sugar, baking soda, and salt in a large bowl.
  3. Add eggs, vanilla, and crushed pineapple (with juice). Stir well.
  4. Fold in coconut and nuts if using. Pour batter into the pan.
  5. Bake for 30-35 minutes. Cool completely.
  6. For frosting, beat butter and cream cheese until smooth. Add powdered sugar, vanilla, and crushed pineapple.
  7. Frost the cooled cake. Garnish with coconut or nuts if desired.
