Ingredients:
- 1 ½ cups Greek yogurt
- 4 cloves garlic (minced)
- 1 small cucumber (peeled and chopped)
- 2 tsp olive oil
- Juice of ½ lemon
- 2 tbsp fresh dill
- Kosher salt (to taste)
For the Zucchini Fritters:
- 2 medium zucchinis (grated)
- 3 handfuls baby spinach (chopped)
- 1 cup crumbled feta cheese
- 2 eggs (beaten)
- 1/2 cup flour
- Salt and pepper to taste
- Olive oil for frying
Instructions:
- Make Garlic Tzatziki: Mix yogurt, garlic, cucumber, olive oil, lemon juice, dill, and salt in a bowl. Chill in the fridge.
- Prepare Fritters: Combine grated zucchini (drained), spinach, feta, eggs, flour, salt, and pepper. Mix well.
- Fry: Heat olive oil in a pan, scoop mixture into patties, and fry until golden on both sides.
- Serve: Enjoy fritters with chilled garlic tzatziki.
