Tasty Veggie Fitters

Ingredients:

  • 1 ½ cups Greek yogurt
  • 4 cloves garlic (minced)
  • 1 small cucumber (peeled and chopped)
  • 2 tsp olive oil
  • Juice of ½ lemon
  • 2 tbsp fresh dill
  • Kosher salt (to taste)

For the Zucchini Fritters:

  • 2 medium zucchinis (grated)
  • 3 handfuls baby spinach (chopped)
  • 1 cup crumbled feta cheese
  • 2 eggs (beaten)
  • 1/2 cup flour
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. Make Garlic Tzatziki: Mix yogurt, garlic, cucumber, olive oil, lemon juice, dill, and salt in a bowl. Chill in the fridge.
  2. Prepare Fritters: Combine grated zucchini (drained), spinach, feta, eggs, flour, salt, and pepper. Mix well.
  3. Fry: Heat olive oil in a pan, scoop mixture into patties, and fry until golden on both sides.
  4. Serve: Enjoy fritters with chilled garlic tzatziki.
