Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 cup mashed sweet potatoes (cooked)
- 1 tsp vanilla extract
- 1/2 cup buttermilk
Caramel Glaze:
- 1/2 cup brown sugar
- 1/4 cup unsalted butter
- 2 tbsp heavy cream
- 1/2 tsp vanilla extract
Directions:
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
- In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- In another bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then add mashed sweet potatoes and vanilla.
- Add the dry mix in batches, alternating with buttermilk. Mix until smooth.
- Pour batter into the pan and bake for 60-70 minutes. Let it cool.
- For the caramel glaze, melt butter, brown sugar, and cream in a saucepan. Stir constantly until it boils. Remove, add vanilla, and drizzle over cake.
