Sweet Potato Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 cup mashed sweet potatoes (cooked)
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk

Caramel Glaze:

  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 2 tbsp heavy cream
  • 1/2 tsp vanilla extract

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In another bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then add mashed sweet potatoes and vanilla.
  4. Add the dry mix in batches, alternating with buttermilk. Mix until smooth.
  5. Pour batter into the pan and bake for 60-70 minutes. Let it cool.
  6. For the caramel glaze, melt butter, brown sugar, and cream in a saucepan. Stir constantly until it boils. Remove, add vanilla, and drizzle over cake.
