Ingredients:
Pistachio Cake:
- 1 cup ground pistachios
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 4 eggs
- 1 cup sugar
- 1/2 tsp vanilla
- 1/2 cup melted butter
Raspberry Gelée:
- 2 cups raspberries
- 1/2 cup sugar
- 2 tbsp lemon juice
- 2 tsp gelatin
Vanilla Frosting:
- 1 lb cream cheese
- 1/2 cup butter
- 3 cups powdered sugar
- 2 tsp vanilla
Mirror Glaze:
- 3/4 cup sugar
- 1/2 cup water
- 1 tbsp gelatin
- 1/2 cup condensed milk
- 1 cup white chocolate chips
- Green food coloring
Garnish:
- Fresh raspberries
- Pistachios
- Gold leaf (optional)
Instructions:
- Preheat oven to 350°F (175°C). Line two 8-inch pans.
- Mix pistachios, flour, baking powder, and salt. Beat eggs, sugar, and vanilla. Fold in dry mix and butter. Divide and bake for 25 mins.
- Purée raspberries, sugar, lemon juice. Add gelatin. Cool and spread on one cake layer.
- Frost with cream cheese, butter, powdered sugar, and vanilla.
- Glaze: Heat sugar, water, and gelatin. Add condensed milk, then mix with white chocolate and green coloring. Pour over cake.
- Garnish with raspberries, pistachios, and gold leaf. Chill to set.
