Pistachio Raspberry Cake

Ingredients:

Pistachio Cake:

  • 1 cup ground pistachios
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 eggs
  • 1 cup sugar
  • 1/2 tsp vanilla
  • 1/2 cup melted butter

Raspberry Gelée:

  • 2 cups raspberries
  • 1/2 cup sugar
  • 2 tbsp lemon juice
  • 2 tsp gelatin

Vanilla Frosting:

  • 1 lb cream cheese
  • 1/2 cup butter
  • 3 cups powdered sugar
  • 2 tsp vanilla

Mirror Glaze:

  • 3/4 cup sugar
  • 1/2 cup water
  • 1 tbsp gelatin
  • 1/2 cup condensed milk
  • 1 cup white chocolate chips
  • Green food coloring

Garnish:

  • Fresh raspberries
  • Pistachios
  • Gold leaf (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Line two 8-inch pans.
  2. Mix pistachios, flour, baking powder, and salt. Beat eggs, sugar, and vanilla. Fold in dry mix and butter. Divide and bake for 25 mins.
  3. Purée raspberries, sugar, lemon juice. Add gelatin. Cool and spread on one cake layer.
  4. Frost with cream cheese, butter, powdered sugar, and vanilla.
  5. Glaze: Heat sugar, water, and gelatin. Add condensed milk, then mix with white chocolate and green coloring. Pour over cake.
  6. Garnish with raspberries, pistachios, and gold leaf. Chill to set.
