Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp butter
- 1 cup sliced mushrooms (cremini, button, or your choice)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1½ cups chicken broth
- ½ cup heavy cream
- 2 tbsp all-purpose flour
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Cook the Chicken:
Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper on both sides. Sear for 6-7 minutes per side until browned and fully cooked. Remove and set aside. - Prepare Mushroom Gravy:
In the same skillet, melt butter. Add mushrooms and onions, sautéing until browned, about 5-6 minutes. Stir in garlic for another minute until fragrant. - Make the Gravy:
Sprinkle flour over the mushroom mix, stirring constantly. Gradually pour in chicken broth while whisking. Add Worcestershire sauce and bring to a simmer. Stir in the heavy cream and cook until the gravy thickens (5-6 minutes). - Finish & Serve:
Return the chicken to the skillet, spoon the gravy over the top, and simmer for 2-3 minutes. Garnish with parsley and serve with mashed potatoes, rice, or pasta.
