Ingredients:

  • 1 Atlantic Salmon (skinless)
  • 1 tbsp Olive Oil
  • 1 tbsp Brown Sugar
  • Pinch of Parsley
  • 1 tbsp Paprika
  • ½ tbsp Cayenne Pepper
  • ½ tbsp Seasoning Salt
  • Pinch of Black Pepper
  • ¼ cup Heavy Whipping Cream
  • 1.5 shots White Wine (Riesling or fruity)
  • 4 tsp Butter (unsalted or your choice)
  • 1 tsp Alfredo Sauce
  • 1 tbsp Ground Oregano
  • ¼ tbsp Old Bay Seasoning
  • 1 tsp Chicken Broth
  • Optional: 2 tbsp Blackened Cajun Seasoning
For Shrimp:
  • 1 lb Shrimp (cleaned and deveined)
  • ½ cup Hennessy
  • ½ stick Butter
  • 1 tbsp Cajun Seasoning
  • 2 tbsp Brown Sugar (or substitute)
  • ½ tbsp Minced Garlic
  • ½ tbsp Red Pepper Flakes
  • 1 tsp Onion Powder
  • White Pepper to taste
  • Parsley (for garnish)

Directions:

For the Salmon:

  1. Coat the salmon with olive oil and season with the spice mix (paprika, cayenne, seasoning salt, black pepper, and Old Bay).
  2. Grill the salmon for 3-4 minutes on each side (adjust based on thickness). Optional: Broil for 1 minute for extra char.
  3. In a pan, heat the heavy cream and wine. Stir and add butter, Alfredo sauce, and chicken broth until creamy. Season to taste.
  4. Drizzle the creamy Cajun butter sauce over the salmon.

For the Shrimp:

  1. Season shrimp with white pepper, onion powder, and Cajun seasoning.
  2. Heat butter in a pan, add garlic, and toss shrimp until pink (about 4-5 minutes).
  3. Add Hennessy and cook until the alcohol burns off. Add brown sugar and red pepper flakes, letting the sauce thicken.
  4. Garnish with parsley and serve alongside the salmon.
