Ingredients:
- 8 oz Shrimp (peeled and deveined)
- 2 Large chicken breasts (cut into pieces)
- 2 Andouille sausage links (sliced)
- 6 Tbsp Butter (divided)
- 3 Tbsp Cajun seasoning (divided)
- 1 tsp Ground thyme
- 1 Onion (chopped)
- 1 Bell pepper (chopped)
- 1 lb Linguini (cooked and drained)
- ⅓ cup Pasta cooking water (reserved)
- 1 cup Heavy whipping cream
- 1 Can diced tomatoes
- 2 tsp Minced garlic
- Salt and pepper (to taste)
Instructions:
- Heat 2 Tbsp of butter over medium-high heat. Cook shrimp with 1 Tbsp Cajun seasoning until done. Set aside.
- Brown the sausage in the same skillet. Remove and set aside.
- In the same pan, add 2 Tbsp butter and cook chicken with 1 Tbsp Cajun seasoning. Set aside.
- Sauté onions and bell pepper in the remaining 2 Tbsp butter until soft.
- Add garlic and reserved pasta water. Sauté for 30 seconds.
- Stir in heavy cream, tomatoes, thyme, salt, and pepper. Simmer until sauce thickens.
- Return shrimp, sausage, and chicken to the skillet. Mix in the linguini and serve!
